(NOTE: These are totally called scotcheroos, more accurately too. I just grew up calling them special K bars for some reason, so that's what I'm calling 'em here!)
This is a beloved Christmas treat for me and I'm happy to share it with you all! ^_^ The following recipe should get you a portion that can feed 3 - 5, but feel free to double or even triple the recipe based on your needs!
☆ 1 ½ cups peanut butter
☆ 1 cup light corn syrup
☆ 1 cup white sugar
☆ 6 cups rice krispies cereal
☆ ½ cup chocolate chips
☆ ½ cup butterscotch chips
☆ Step 2: Mix peanut butter, corn syrup, and sugar together in a large pot; cook and stir over medium heat until peanut butter melts. Bring mixture to a boil. Remove pot from the heat.
☆ Step 3: Stir in rice cereal until well combined.
☆ Step 4: Transfer mixture into the prepared pan and pat it down with buttered hands.
☆ Step 5: Melt chocolate chips and butterscotch chips in a medium saucepan over medium-low heat; stir until smooth. Or like, you could totally just microwave the chips for 30 second intervals until you're able to stir them together until smooth. That works too.
☆ Step 6: Spread over top of rice krispie mixture in pain.
☆ Step 7: Cool completely, about 30 - 120 minutes (genuinely my results have varied LOL), before cutting into squares.
